Elote Pasta Salad (Mexican street corn pasta salad)

Hi Y’all!

Ive got a super yummy, super easy and healthy recipe for you today! Things have been a bit crazy for me the past few weeks. I’ve been MIA around here due to traveling alone with my little guy. But Ali’s done a  great job am I right?

I found the recipe HERE. This pasta is so simple and easy to make not to mention nutritious! Both my boys loved it, we’ll be making it again.   I hope you enjoy!!

INGREDIENTS

2 cups uncooked whole wheat pasta
1 large Chicken breast
3-4 corns on the cob (or 2 cans of corn)
1 large avocado
3 green onions
1/2 bunch cilantro

optional: 1/2 cup black beans, 1 tablespoon finely chopped jalapeño (I omitted the jalapeño when making. We can’t handle the spiciness 🤦‍♀️).

DRESSING:

1/2 cup Chosen Foods avocado oil mayo
3 tablespoons freshly squeezed lime juice
1/8 teaspoon cumin
1/4 teaspoon paprika
1/2 teaspoon chili powder
1 teaspoon hot sauce ( I used tapatio)
Pinch of pink salt & ground pepper

DIRECTIONS

Cook pasta according to package. Rinse in cold water and dry. Cook chicken (I seasoned with salt, pepper, and paprika). If using corn on cob, boil corn until easily peirceable with a fork and cool. Meanwhile: prep the veggies (cube avocado, dice green onion, loosely chop cilantro, finely chop jalapeno). Toss salad ingredients together into a bowl. Mix dressing ingredients together in a small bowl and pour over salad. Toss well and enjoy!

*you can put over lettuce to get in more greens 😋😋
